Almond Suji Cookies
Ingredients:
225g ghee (clarified butter)
150g icing sugar
340g plain flour
1 tsp baking powder
100g ground almonds
1 tsp vanilla essence
1 egg yolk (for glazing)
Method:
1. Cream ghee with sugar and vanilla essence until light and creamy.
2. Fold in sifted flour and add in ground almonds. Mix to a soft dough and refrigerate dough for half an hour.
3. Place dough between two plastic sheets and roll out flat. Cut out designs with cookie cutters. Arrange on greased baking trays. Glaze cookies with beaten egg.
4. Bake in a preheated oven at 170 deg C for 15 minutes until lightly browned.

Cooking or baking from some of these recipes that you have graciously shared is a blessing. I have an aunt who has also recovered from breast cancer and what’s more ironic is that, she too took all of her old cook books especially those handwritten ones and gave it to me.For me these are rear treasures and so are your recipes. She told me that handing down or rather sharing recipes is actually a blessing because you somehow make people happy with food that you have prepared with your own hands. Can I use butter instead of ghee?

used semolina instead of plain flour,200g of butter n added water to form a dough.10mins in fridge,5 freezer,good result
used 310g of semolina instead.result after putting water to form a dough, sticky n sets after removing from fridge.rolled a spoonful of the dough in ball n flatten with my hand ffor each cookie instead of rolling n then cut into forms.
result:sugar perfect not too sweet,biscuit crunchy outside n a bit soft inside,so not dry.should be great with tea….next time ill try a polenta biscuit
